Preparation
Juicing the Oranges and Lemon
Begin by juicing the fresh oranges to yield about 2 cups of orange juice. Strain to remove any pulp if desired. Next, measure out 1 tablespoon of fresh lemon juice and set it aside.
Mixing the Base
In a large mixing bowl, combine the freshly squeezed orange juice, lemon juice, and Demerara sugar. Stir until the sugar is completely dissolved.
Whipping the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip, as you want it to be light and airy.
Combining Ingredients
Gently fold the whipped cream into the orange mixture. Then, carefully fold in the whipped egg white and ground cinnamon until just combined.
Serving
Final Assembly
Spoon the creamy orange mixture into serving glasses, filling them about three-quarters full.
Adding Soda
Top each glass with soda water for a refreshing fizz. Adjust the amount of soda to your taste.
Garnishing
Optionally, you can sprinkle a dash of ground cinnamon on top for garnish.
