Mousse Preparation
Melt Chocolate and Butter
In a heatproof bowl, combine the Valrhona dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.
Whisk Eggs and Sugar
In a separate bowl, whisk the large eggs with granulated sugar until the mixture is pale and slightly thickened. This should take about 4-5 minutes.
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring gently until well combined. Be careful not to cook the eggs.
Whipping Cream
Whip Cream
In a large mixing bowl, pour the heavy whipping cream and add the vanilla extract. Using an electric mixer, whip the cream until it forms soft peaks.
Fold Cream into Chocolate Mixture
Gently fold the whipped cream into the chocolate mixture in thirds, being careful not to deflate the whipped cream. Continue folding until fully combined.
Chilling and Serving
Chill Mousse
Divide the mousse evenly into serving dishes or glasses. Cover and refrigerate for at least 2 hours, or until set.
Garnish and Serve
