Method
Sausage
Cook sausage patties
Heat a 10-inch nonstick or cast-iron skillet over medium heat until shimmering. Add 1 tsp vegetable oil and swirl. Place two pork sausage patties in the skillet, leaving space between them. Cook 3–4 minutes on the first side without moving until nicely browned. Flip and cook 3–4 minutes more until cooked through (internal temperature 160°F / 71°C) and well-browned. Reduce heat to low and keep patties warm in the pan while you cook the egg and toast the bread.

Fry a round egg
Wipe the skillet if needed so it's clean of excess grease but keep a little for flavor, or use a separate small skillet. Add 1 tsp butter and melt over medium-low. Break 1 large egg into a small bowl, then gently slip the egg into the skillet. Season with a pinch of salt and pepper. Cook the egg until the white is set but the yolk is still slightly runny, about 2–3 minutes. For a fully set yolk, cover the skillet with a lid and steam 30–60 seconds more. Remove the egg carefully with a spatula and keep warm on a plate.

Assemble with cheese
Place one cooked sausage patty on the bottom half of the toasted muffin. Immediately top the hot patty with 1 slice of American cheese so it melts slightly. Place the fried egg on top of the cheese (or on top of a second sausage if you prefer sausage-egg-sausage). Top with the second sausage patty if stacking, or place cheese and sausage as desired. Cap with the top half of the muffin. Press gently to help the cheese meld.
