Split the roll or lay out the two slices of bread. Spread 1 tablespoon butter evenly on the cut sides of the bread. Set aside.

Prepare bread

Place a 10-inch nonstick or cast-iron skillet over medium heat. Add 1 teaspoon butter or oil and let it melt and coat the surface.

Heat pan

Add the 4 oz sliced country ham to the hot skillet in a single layer. Cook 1–1.5 minutes per side, until the edges begin to brown and the ham releases a bit of fat. Transfer ham to a plate and keep warm. Do not overcook — country ham is already cured and can become tough if cooked too long.

Fry the country ham

If needed, add a small additional smear of butter to the skillet. Crack 2 large eggs into the pan (or crack into a bowl and slide in). Season with 1/4 tsp salt and a pinch of black pepper. For sunny-side-up: cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook about 2 minutes, gently flip and cook 15–30 seconds more. For fully set yolks cook 1–2 minutes after flipping.

Fry the egg

While the eggs finish, place the buttered cut sides of the bread in another skillet over medium heat or in a toaster oven, buttered side down, and toast until golden, about 1–2 minutes. Place one toasted half butter-side up, top with the fried country ham (all slices), then the fried eggs (stack if necessary). Immediately place 1 slice American cheese over the hot eggs so it softens and melts. Top with the second toasted bread half, press gently to compact.

Toast bread and assemble

Let the sandwich rest 30 seconds so the cheese sets slightly, then cut in half if desired and serve hot.
