The original Southern breakfast biscuit: nothing beats a slice of aged country ham.

If your country ham is extremely salty, lay the slices in a shallow dish and cover with cold water for 30–60 minutes, changing the water once. Pat dry thoroughly with paper towels before cooking.

Soak (if very salty)

Heat a large heavy skillet or cast-iron pan over medium heat until hot (about 2–3 minutes).

Prepare skillet

Add 1 tablespoon of butter to the hot skillet and let it melt. Add the ham slices in a single layer without overcrowding (cook in batches if necessary). Fry 1–2 minutes per side until edges begin to brown and the fat renders. Remove to a warm plate.

Pan-fry ham

Lower heat to medium-low, add remaining 1 tablespoon butter to the skillet and return the ham for 15–30 seconds on each side to glaze. Sprinkle with freshly ground black pepper and, if using, a light drizzle (about 1/2 to 1 teaspoon) of honey or sorghum over each slice. Remove and keep warm.

If using store-bought frozen biscuits, bake according to package directions until hot and golden. If using fresh biscuits, split and warm in a 350°F (175°C) oven for 5–8 minutes or wrap in foil and warm 8–10 minutes. Alternatively, split and toast cut side down in the skillet used for ham for 1–2 minutes to pick up flavor.

Place 1–2 slices of warmed country ham on the bottom half of each biscuit (depending on thickness and appetite). Top with optional pickles or pickled red onion and sprinkle with chopped parsley. Close with the top half of the biscuit.

Serve immediately while hot. Offer extra honey/sorghum and black pepper at the table. Country ham is very flavorful — a little goes a long way, so adjust accompaniments to taste.
