Make Boom Boom Sauce
In a medium bowl combine mayonnaise, sriracha, sweet chili sauce, lime juice, honey, smoked paprika, garlic powder and salt. Whisk until smooth and taste; adjust seasoning (more sriracha for heat, more honey for sweetness). Set aside in the refrigerator while you prepare the other components.

Cure and Cook Bacon
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay bacon slices in a single layer on the rack. Sprinkle brown sugar evenly over bacon, then grind black pepper and optional cayenne on top. Bake until bacon is crisped and caramelized, about 15–20 minutes depending on thickness. Rotate the pan once halfway through for even cooking. Remove when crisp and transfer bacon to a paper towel-lined plate to drain and cool slightly.
Slice for Rolls
If your bacon slices are longer than the rolls, cut each slice in half to fit the roll lengthwise. Keep warm.

Core and slice the tomato into 1/4-inch thick slices. Rinse and pat dry the lettuce leaves, then stack and slice or tear to fit the rolls (about 2 cups loosely packed). If using cilantro, rinse and roughly chop. If using avocado, slice just before assembling to prevent browning.

Assemble Each Roll
Spread about 2 tablespoons of the Boom Boom sauce on the bottom half of each toasted roll. Layer 3 slices of caramelized bacon per roll (or enough to cover), then add 2–3 tomato slices, a generous handful (about 1/2 cup) of lettuce, and a few cilantro leaves if using. Add pickled jalapeños or avocado slices if desired. Finish with another tablespoon of sauce on the top half of the roll and place it on top.
Serve
Press sandwiches gently to compact slightly, cut in half if desired, and serve immediately while bacon is warm and rolls are still slightly crisp. Provide extra Boom Boom sauce on the side for dipping.
