Make the sauce
In a small bowl, combine 1/4 cup mayonnaise, 1 tablespoon gochujang, 1 teaspoon sweet chili sauce, 1/2 teaspoon sriracha, 1 teaspoon rice vinegar, 1/2 teaspoon lemon juice, 1/2 teaspoon grated garlic, 1/4 teaspoon smoked paprika, 1/2 teaspoon sugar (or honey) and 1/8 teaspoon salt. Whisk until smooth. If the sauce is too thick for easy spreading, thin with up to 1 teaspoon water, adding a little at a time until you reach a spreadable consistency. Taste and adjust heat or acidity (more sriracha, vinegar, or sugar) as desired. Set aside in the refrigerator while you prepare the sandwich so flavors meld (5–10 minutes).

Prepare bacon
Cook the three slices of applewood-smoked bacon to your preferred crispness. For stovetop: place bacon in a cold skillet in a single layer and cook over medium heat, turning occasionally, 8–12 minutes until evenly browned and crisp; drain on paper towels. For oven: lay bacon on a foil-lined sheet and bake at 400°F (200°C) for 12–18 minutes until crisp. If you want a little extra flavor on the bread, reserve 1 teaspoon of the rendered bacon fat for toasting (optional).
Toast bread
Lightly butter one or both slices of bread (use 1 teaspoon unsalted butter total if desired). Toast in a skillet over medium heat (using reserved bacon fat or 1 teaspoon neutral oil) or in a toaster until golden and crisp, about 1–2 minutes per side in a skillet or as preferred in a toaster. Remove and keep warm.
Prepare tomato and lettuce
Slice the tomato into 1/4-inch thick slices. Season the tomato slices lightly with 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper, distributing evenly. Rinse and pat dry lettuce leaves and trim to fit bread if necessary.
Assemble sandwich
Spread about 2 tablespoons of the Boom Boom sauce evenly on one side of each toasted bread slice (adjust to taste). On the bottom slice, layer the lettuce leaves, then the seasoned tomato slices (one layer), then the three slices of cooked bacon (slightly overlapping). Place the top slice of bread sauce-side down. Press gently to compress the sandwich slightly.
Serve
Cut the sandwich in half if desired and serve immediately. Offer extra Boom Boom sauce on the side for dipping. Keeps well for immediate serving; if making ahead, keep sauce separate and assemble just before eating to maintain crisp bacon and toast.
