If using frozen tater tots: preheat oven to 425°F (220°C). Arrange 2 cups of tots in a single layer on a rimmed baking sheet. Bake for 20–25 minutes, turning once halfway, until golden and crisp. Remove and keep warm.

If using cheese grits: prepare 1.5 cups cooked cheese grits (see quick method) — bring 1 cup water and 0.5 cups milk to a simmer, whisk in 0.5 cup quick grits, stirring constantly until thick (~3–5 minutes). Stir in 1–2 tablespoons butter and 1/4 cup shredded cheddar, season with 1/8 tsp salt. Keep warm.

Protein (cook and keep warm)

Bacon: cook 2 slices in a skillet over medium heat 6–8 minutes, turning, until crisp. Drain on paper towels and chop roughly.

Sausage patty: cook 1 breakfast sausage patty in skillet over medium heat 4–6 minutes per side until internal temperature reaches 160°F (71°C). Crumble into pieces.

Ham: if using diced ham, warm 2 oz in skillet 1–2 minutes until heated through.

Plant-based sausage: cook 2 oz crumbles in skillet over medium heat 3–4 minutes until browned and heated through.

Frying Eggs

Heat a nonstick skillet over medium-low. Add 1 tsp cooking oil and 1 tbsp butter; let butter foam. Crack 2 large eggs into the skillet, spacing them slightly apart. Cook until whites are set but yolks remain runny, about 2–3 minutes for sunny-side; cover the pan for 30–45 seconds to set whites more if needed. Season with 1/8 tsp salt and a pinch of black pepper. For over-easy, flip gently and cook 15–20 seconds more.

Assemble the Box

Place chosen base (2 cups of tots or 1.5 cups cheese grits) into a serving box or bowl, spreading into an even layer.

Distribute chosen protein (approx. 2 slices chopped bacon OR 1 sausage patty crumbled OR 2 oz diced ham OR 2 oz plant-based crumbles) evenly over the base.

Scatter 1/2 cup shredded sharp cheddar over the hot base and protein so it begins to melt.

Place the two fried eggs on top of the cheese and protein, spacing them neatly.

Drizzle 3 tablespoons Boom Boom sauce evenly over the eggs and cheese.

Garnish with 1 tablespoon thinly sliced green onions. Serve immediately so yolks remain runny and cheese is melty.
