Cook the sausage patties
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tsp vegetable oil and swirl to coat. Place the 4 pork sausage patties in the skillet, making sure they are not crowded. Cook 3–4 minutes on the first side without moving, until well browned. Flip and cook another 3–4 minutes, or until the internal temperature reaches 160°F (71°C) and patties are cooked through. Sprinkle each patty with a light grind of black pepper while finishing. Transfer to a plate and tent loosely with foil to keep warm.

Fry the eggs
Wipe the skillet lightly with a paper towel or heat a second nonstick skillet over medium-low and add 1 tbsp unsalted butter. When the butter is melted and foaming, crack two eggs into a small bowl to check for shells, then gently slide them into the skillet. Season with about 1/8 tsp salt per egg (total 1/4 tsp). Cook the eggs sunny-side up for 2–3 minutes until whites are set but yolks still runny; for over-easy, carefully flip each egg with a spatula and cook 15–30 seconds more. Repeat with the remaining two eggs if your pan fits only two at a time. Keep eggs warm on a plate tented with foil.

Toast and butter the buns
Split the 4 sandwich buns or English muffins and toast them cut-side down in a clean skillet or toaster until golden, about 1–2 minutes. Optionally spread about 1 tbsp unsalted butter across the cut sides while still warm.
Assemble sandwiches
Place the bottom half of each toasted bun on a work surface. Put one warm sausage patty on each bottom bun. Top each sausage with one slice of American cheese. Immediately set one fried egg on top of the cheese so residual heat helps the cheese soften. Cover with the top bun and press lightly. If you prefer melted cheese, place assembled open sandwiches under a broiler or in a 350°F (175°C) oven for 1–2 minutes until cheese softens and egg is warmed through—watch closely to avoid overcooking the egg.
