Prep and season
Pat the chicken thighs dry with paper towels. Trim excess fat if needed. In a bowl, combine kosher salt, black pepper, smoked paprika, and garlic powder. Rub the spice mix evenly over both sides of the chicken thighs. Lightly dredge each thigh in the all-purpose flour, shaking off excess.
Pan-sear
Heat a large skillet over medium-high heat. Add 3 tablespoons of neutral oil and let it get shimmering but not smoking. Add chicken thighs, presentation side down first if you have one, and cook without moving for 4–5 minutes until a deep golden-brown crust forms. Flip and cook another 3–4 minutes until the second side is browned and the internal temperature reaches 155–160°F (68–71°C). Reduce heat if the pan smokes excessively.
Finish cooking
If thighs are thick and not fully cooked, reduce heat to medium-low, cover the pan partially, and cook 3–5 more minutes until internal temperature reaches 165°F (74°C). Transfer chicken to a plate and tent loosely with foil to rest while you make the sauce (resting also helps the juices redistribute).
Hot Honey Butter Sauce
Melt butter and combine aromatics
In a small saucepan over low-medium heat, add the unsalted butter and melt gently. Once melted, stir in the sriracha, chopped chipotle, and red pepper flakes. Cook for 30–45 seconds, stirring, to bloom the spices and combine flavors—do not let the butter brown.
Add honey and balance
Lower the heat to low and whisk in the mild honey and hot-chili honey (if using) until fully incorporated. Add the apple cider vinegar and lemon zest to brighten the sauce, then season with 1/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust: add more sriracha for heat, more honey for sweetness, or a pinch more vinegar if it needs acidity.
Emulsify and keep warm
Keep the sauce warm on the lowest heat or in a heatproof bowl set over a pan of warm water so it stays pourable. Whisk occasionally to maintain a smooth, glossy texture. The sauce should be pourable but thick enough to cling to the chicken.
To Finish & Serve
Coat the chicken
Place the rested chicken in the skillet over very low heat or on a baking sheet. Spoon or brush a generous amount (about 2–3 tablespoons per thigh) of the hot honey butter sauce over each piece so it’s well coated. Return to the skillet for 30–60 seconds per side on very low heat to set the glaze—do not simmer, just warm through so the butter melds with the crust.
Serve suggestion
Serve immediately while hot and glossy. Pairs well with mashed potatoes, steamed rice, or a crisp green salad to cut the richness.
