Prep

Bring all ingredients to room temperature for 10 minutes if possible. Butter the cut sides of the bread or split roll lightly (about 1/2 tbs total). Tear the American cheese slice in half if needed to cover the egg and ham.

Cook ham

Heat a 10-inch skillet over medium heat. Add 1 tsp neutral oil and swirl. Add the 2 country ham slices in a single layer and sear 1 to 1 1/2 minutes per side, until edges are crisp and meat is heated through. Remove ham to a plate and keep warm.

Fry egg

Reduce heat to medium-low. Add 1 tbs butter to the same skillet and let it melt and foam. Crack the egg into a small bowl to check for shells, then gently slide the egg into the skillet. Season the egg white with 1/8 tsp salt and 1/8 tsp black pepper. Fry the egg for 2 to 3 minutes for over-easy (flip and cook 20–30 seconds more) or 3 to 4 minutes for over-medium until the white is set and yolk at desired doneness.

Melt cheese

When the egg is nearly done, place the American cheese slice on top of the egg. Cover the skillet with a lid for 20–30 seconds to help the cheese melt and the egg finish cooking gently.

Toast bread

While cheese is melting, toast the buttered bread or split roll in a separate dry skillet over medium heat, buttered side down, until golden and crisp, about 1 to 2 minutes. If using the same skillet, push egg and ham to the side and place bread butter-side down to toast briefly.

Assemble

Place one or both country ham slices on the bottom half of the toasted bread/roll. Slide the cheese-topped fried egg on top of the ham. Top with the other bread half. Press gently, slice if desired, and serve immediately.

Notes

Country ham is salty; taste before adding extra salt. For a runnier yolk, serve immediately after cheese melts. Double quantities to make more sandwiches.
