Make the sauce
In a small bowl combine 1/2 cup mayonnaise, 1 tablespoon sriracha, 1 teaspoon sweet chili sauce, 1 teaspoon ketchup, 1 teaspoon rice vinegar, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/8 teaspoon smoked paprika, 1/2 teaspoon honey (optional) and 1/2 teaspoon fresh lemon juice. Whisk until smooth and homogenous. Taste and adjust: add more sriracha for heat, more honey for sweetness, or a pinch more vinegar for brightness. Cover and chill while preparing the sandwich so flavors meld (at least 10 minutes, up to 2 hours).
Sandwich
Cook the bacon
Lay 3 slices of applewood-smoked bacon in a cold skillet without overlapping. Turn heat to medium-high and cook, flipping occasionally, until edges are crisp and fat renders, about 8–10 minutes depending on thickness. For extra-even crispness, place a heavy spatula on top for the last minute. Drain on a paper towel-lined plate.
Prepare tomato and lettuce
While bacon cooks, slice the tomato into three even slices. Lightly season the tomato slices on both sides with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper to draw out flavor. Wash and pat dry 2 lettuce leaves; trim any large ribs if desired.
Toast the bread
Spread 1 tablespoon unsalted butter evenly on one side of each bread slice. Heat a clean skillet over medium heat and place bread butter-side-down. Toast until golden and crisp, about 1–2 minutes per side (buttered side first for maximum flavor). Remove and keep warm.
Assemble the Boom Boom BLT
Spread about 1.5 tablespoons of the chilled Boom Boom sauce evenly across the unbuttered face of each toasted bread slice (total ~3 tablespoons). On the bottom slice, layer lettuce leaves first (this helps prevent sogginess), then the three bacon slices evenly, followed by the seasoned tomato slices. Spoon any remaining drips of sauce over the tomato if desired. Top with the second slice of bread, sauce-side down.
Finish and serve
Press the sandwich lightly, cut diagonally if desired, and serve immediately. Makes one hearty Boom Boom BLT. If serving later, keep components separate (sauce refrigerated) and assemble within 15–30 minutes of serving to avoid soggy bread.
