Prepare Raspberries

In a small bowl, mash the fresh raspberries with 1 tablespoon of granulated sugar. Set aside.

Make the Base

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cook until thickened. Remove from heat and stir in the mashed raspberries and vanilla extract.

Whip Egg Whites

In a clean mixing bowl, whip the egg whites until soft peaks form. Gradually add the remaining granulated sugar and continue whipping until stiff peaks form.

Combine Mixtures

Gently fold the egg whites into the raspberry mixture in three additions, being careful not to deflate the egg whites.

Prepare Ramekins

Preheat the oven to 375°F (190°C). Butter four ramekins and sprinkle with powdered sugar to coat the insides.

Bake Soufflés

Divide the soufflé mixture evenly among the prepared ramekins. Place them in a baking dish filled with hot water (water bath). Bake for 20-25 minutes until risen and set.

Gently remove from the oven and serve immediately for the best rise. Optionally, dust with additional powdered sugar before serving.
