Prepare the Pecans

Preheat the oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them in the oven for about 8-10 minutes until fragrant. Let cool and chop coarsely.

Make the Base

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring constantly until the mixture thickens. Remove from heat.

Whisk in the sugar, vanilla extract, and a pinch of salt. Allow the mixture to cool slightly before adding the egg yolks, one at a time, mixing well after each addition. Stir in the chopped pecans.

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the pecan mixture in three parts, being careful not to deflate the egg whites.

Preheat the oven to 375°F (190°C). Grease individual ramekins with butter and dust with sugar. Pour the soufflé mixture into the ramekins, filling them about 3/4 full. Bake for 20-25 minutes until puffed and golden.
