Preparation Instructions
Prepare the Mojo Pulled Pork
In a blender, combine garlic, orange juice, lime juice, oregano, cumin, salt, and black pepper. Blend until smooth. Marinate the pork shoulder in the mojo marinade for at least 2 hours, preferably overnight.
Cook the Pork
Preheat your oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover it tightly with aluminum foil. Cook for about 3-4 hours, or until the pork is tender and can be easily shredded. Remove from the oven and let it rest before shredding.
Assemble the Cubano
Slice the telera rolls in half. On the bottom half, layer shredded mojo pork, sliced ham, Swiss cheese, pickles, and yellow mustard. Top with the other half of the roll.
Press the Sandwich
Preheat a panini press or a skillet over medium heat. If using a skillet, place a heavy skillet on top of the sandwiches to press them down. Grill the sandwiches for about 3-5 minutes, or until the bread is crispy and the cheese is melted.
Serve
Remove the sandwiches from the heat, cut in half, and serve warm.
