Prepare the Sweet Potatoes

Preheat the oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes. Toss them with 1 tablespoon of olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for about 25-30 minutes until tender and slightly caramelized.

Marinate the Pork Chops

While the sweet potatoes are roasting, mix the Thai chili paste with 1 tablespoon of olive oil. Rub this mixture onto the Berkshire pork chops, ensuring they are well coated. Let them marinate for at least 15 minutes.

Grill the Pork Chops

Preheat your grill to medium-high heat. Grill the marinated pork chops for about 6-8 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let them rest for a few minutes.

Prepare the Cucumber Salad

While the pork chops are resting, slice the Persian cucumber into thin rounds. Toss them with a pinch of salt and chopped fresh cilantro.

Serve

Plate the grilled pork chops alongside the roasted sweet potatoes and cucumber salad. Garnish with additional cilantro if desired.
