Heat 3 gallons of water to about 165°F (74°C). Add the crushed pale malt, crystal malt, and roasted barley to the water and hold the temperature at 152°F (67°C) for 60 minutes.

Mashing

After mashing, sparge with 2 gallons of water heated to 170°F (77°C) to collect the wort.

Sparging

Bring the collected wort to a boil. Add the hops and boil for 60 minutes.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment for 1-2 weeks at a consistent temperature of around 68°F (20°C).

Fermentation

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Allow to condition for another 2 weeks.
