Make the Syrup

Combine and simmer

In a medium saucepan, combine 2 cups water, dark brown sugar, granulated sugar, and molasses. Warm over medium heat, stirring, until sugars dissolve. Bring to a gentle simmer.

Add botanicals

Add sarsaparilla root, crushed anise seed, star anise, crushed cardamom pods, sliced fresh ginger, orange peel, and bruised lemongrass (if using) to the simmering syrup. Reduce heat to low so the mixture barely simmers.

Infuse

Let the mixture gently simmer for 10 minutes, stirring occasionally to prevent scorching. After 10 minutes, remove from heat and cover the pan. Allow the flavors to steep for 20–30 minutes for a concentrated infusion.

Strain and finish syrup

Strain the infused syrup through a fine-mesh sieve or cheesecloth into a heatproof container. Press or squeeze solids to extract as much liquid and flavor as possible. Stir in vanilla extract, liquid licorice extract (or a small pinch of crushed licorice), root beer extract, wintergreen oil (use very sparingly — start with less and adjust to taste), citric acid, and a pinch of salt. Taste carefully and adjust: add another 1/4–1/2 tsp root beer extract or 1/8 tsp wintergreen if you want a stronger profile. Allow syrup to cool to room temperature.

Sweetness and balance check

Taste the cooled syrup — it should be strongly flavored and somewhat sweet (this is a concentrate). If too sweet, add a little more citric acid; if too tart, add a teaspoon of brown sugar dissolved in a splash of warm water.

Store

Transfer syrup to a clean jar or bottle. Refrigerate. Syrup will keep up to 2 weeks refrigerated.

Assemble the Root Beer

Mix beverage

For each serving (about 1 cup/240 ml), pour roughly 2 tablespoons (30 ml) of the root beer syrup into a glass. Add ice if desired. Slowly pour 1 cup (240 ml) cold carbonated water over the syrup so carbonation is retained. Stir gently once to combine.

Adjust sweetness and flavor

Taste and adjust: add another teaspoon of syrup for stronger flavor or a splash of carbonated water to lighten. If you used more potent wintergreen or licorice extracts, adjust accordingly.

Serve

Serve immediately. For a classic root beer float, add one or two scoops of vanilla ice cream on top. Garnish with an orange twist or a sprig of mint if desired.
