Basic Tea

Heat water

Pour 2 cups of cold water into a kettle or small saucepan. Heat until it reaches a rolling boil (about 212°F / 100°C) for black tea or until steaming just before boiling (about 175–185°F / 80–85°C) for green or delicate teas. If using a stovetop, bring to a boil and then remove from heat for green tea.

Steep tea

Place 1 tea bag in a mug. Pour the hot water over the tea bag. Steep for the appropriate time: 3–5 minutes for black tea, 2–3 minutes for green tea, or 5–7 minutes for herbal tea. Adjust steep time to taste (longer = stronger, shorter = milder).

Sweeten and finish

Remove and discard the tea bag (or leave in for stronger flavor). Stir in honey or sugar to taste, starting with 1 tsp. Add milk or cream (about 2 tbsp) if desired, and a lemon slice if using (do not use lemon with milk to avoid curdling).

Add fresh ginger or spices

If using ginger or a cinnamon stick, add it to the water before heating or to the mug while steeping so the flavor infuses. Use about 1 tsp thinly sliced ginger or 1/2 cinnamon stick per 2 cups. Remove before drinking.

Add fresh herbs

If using fresh mint, bruise the leaves lightly and add them to the mug while steeping or as a garnish. Remove or leave in according to preference.
