Prepare glassware

Chill a coupe or Nick & Nora glass by filling it with ice water while you prepare the cocktail.

Measure and combine the spirits: pour 2 oz pisco and 0.5 oz añejo reposado tequila into a cocktail shaker.

Add the citrus and sweeteners: add 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice, and 0.5 oz simple syrup to the shaker.

Add aperitif and aromatics: add 0.25 oz Aperol (or Combier) and, if using, 1/8 tsp lavender or rosewater for a floral accent.

Incorporate egg white

Add 1 egg white (or equivalent aquafaba) to the shaker to give the cocktail a silky foam. Add 2 dashes Angostura bitters to the mixture.

Dry shake

Secure the shaker and shake vigorously without ice for 12–20 seconds. This emulsifies the egg white, producing a rich foam.

Wet shake

Open the shaker, add a generous handful of ice, then shake again vigorously for 10–12 seconds until the shaker is cold to the touch and well-chilled.

Prepare serving glass: dump the ice water from your chilled coupe/Nick & Nora and strain the cocktail through a fine mesh strainer into the glass to ensure a smooth texture and remove ice shards.

Finish & garnish

Express the oils of a grapefruit twist over the foam then drop it onto the surface (or place a dehydrated grapefruit wheel). Optionally slide a micro-herb sprig onto the rim for visual contrast.
