Method
Protein & Searing
Prep chicken
Pat the chicken breasts dry and cut into 1/2-inch cubes. Season lightly with 1/2 tsp salt and 1/2 tsp black pepper.
Cook chorizo
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the loose chorizo and break it up with a wooden spoon. Cook 5–7 minutes until browned and most fat rendered. Transfer the cooked chorizo to a bowl leaving fat in the pan.
Sear chicken
Add the remaining 1 tablespoon olive oil to the same skillet and reduce heat to medium-high. Add the cubed chicken in a single layer (do in two batches if crowded). Sear 3–4 minutes per side until golden but not fully cooked through (internal still slightly pink). Remove chicken to the bowl with chorizo.
Vegetables & Aromatics
Reduce heat to medium. Add the diced onion and red bell pepper to the skillet and sauté 4–5 minutes until softened and beginning to brown. Add the minced garlic and cook 30–45 seconds more until fragrant.
Stir in the soybeans and cook 2–3 minutes to warm through and combine flavors.
Seasoning & Simmer
Return the cooked chorizo and seared chicken to the skillet. Sprinkle the smoked paprika, ground cumin, ancho chili powder, crushed red pepper flakes, remaining 1/2 tsp salt, and remaining 1/2 tsp black pepper over the mixture. Stir to coat everything evenly.
Pour in the chicken broth and bring to a gentle simmer. Reduce heat to medium-low, cover partially, and simmer 6–8 minutes or until chicken is cooked through (internal temp 165°F / 74°C) and sauce has slightly reduced. Uncover and simmer 1–2 more minutes if you want a firmer mixture.
Taste and adjust seasoning with additional salt, pepper, or crushed red pepper flakes if desired. Stir in fresh lime juice and chopped cilantro just before removing from heat.
Serve
Spoon Pollo De Chorizo onto warm tortillas or over rice. Top with sliced avocado and a dollop of sour cream or crema if using. Serve immediately.
Leftovers: cool to room temperature and store in an airtight container in the refrigerator up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of broth if needed to loosen.
