Date Cake
Prepare dates
Place chopped dates in a heatproof bowl. Pour 1 cup hot water over the dates, stir in 1 tsp baking soda, and let sit for 10 minutes to soften and develop a slightly caramelized profile. After 10 minutes, mash lightly with a fork so some texture remains.
Make batter
Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan or individual ramekins. In a large bowl, cream 3/4 cup softened unsalted butter with 1 cup light brown sugar until pale and fluffy, about 3–4 minutes. Add eggs one at a time, beating until incorporated, then stir in 1 tsp vanilla extract.
Combine dry ingredients
Whisk together 1 1/4 cups all-purpose flour, 1 tsp baking powder, and 1/2 tsp fine sea salt in a medium bowl.
Bake
Bake the cake in the preheated oven for 25–30 minutes (for ramekins 15–18 minutes) or until a toothpick inserted into the center comes out with moist crumbs but not raw batter. Remove from oven and let rest 10 minutes before turning out.
Foie Gras Torchón
Cure foie gras
Using a small knife, gently separate any visible veins from the foie gras lobe and remove. Season the lobe evenly with 1 tsp coarse salt and 1/2 tsp sugar. Sprinkle 1 tbsp Armagnac over the lobe and rub gently to distribute.
Wrap and press
Lay out a double layer of cheesecloth, place the foie gras in the center, and roll tightly to form a compact cylinder. Wrap the cheesecloth-wrapped foie gras in plastic wrap, twisting the ends to compress. Place the roll in a small loaf pan or on a plate, weight it with a can or small skillet, and refrigerate for 12–24 hours to allow flavors to settle and excess liquid to press out.
Unwrap and chill
After curing, remove the weight and unwrap the torchon. Gently pat dry with paper towel. Keep chilled until ready to slice. Slice into 1/2-inch medallions just before plating.
Blood Toffee Sauce
Start caramel
In a medium heavy-bottomed saucepan over medium heat, melt 1/2 cup unsalted butter. Add 1 cup dark brown sugar and stir until the sugar dissolves and mixture comes to a simmer, about 2–3 minutes.
Build sauce
Carefully stir in 3/4 cup heavy cream (warm slightly first to prevent seizing) and 1 tsp blackstrap molasses. Add 2 tbsp fresh orange juice and 1/4 cup red wine (or blood orange juice) to introduce acidity and the deep 'blood' tone. Reduce heat to low and simmer gently, stirring, for 4–6 minutes until sauce thickens and coats the back of a spoon.
Finish seasoning
Remove from heat and whisk in 1/4 tsp fine sea salt. If the sauce is too thick, thin with 1–2 tbsp warm cream or water. Keep warm until plating.
Garnish & Assembly
Plate
Warm a slice or portion of the date cake briefly in a 300°F oven for 5 minutes or microwave for 10–15 seconds. Place the warm cake on each serving plate.
Add foie gras
Place one or two 1/2-inch medallions of chilled foie gras torchon beside or atop the warm cake. The contrast of cold, rich foie gras and warm cake is intentional.
Sauce and finish
Generously spoon warm blood toffee sauce over the cake and a touch onto the foie gras edge. Add a small scoop of vanilla ice cream or a dollop of clotted cream alongside. Sprinkle 1/4 cup chopped toasted hazelnuts or microgreens over the plate for texture and a light visual contrast. Dust lightly with powdered sugar if desired.
Serve
Serve immediately so the sauce is warm and the ice cream begins to melt slightly. Recommend 1–2 slices of foie gras per serving for a balanced richness against the sweet sauce and cake.
