Sliders (makes 2 sliders)

Optional kid-friendly side

Method

Prepare protein

  1. 1

    Warm and season

If using cooked pork, brisket, or chicken from fridge, place 4 oz of chosen protein in a small saucepan or skillet with 1 tablespoon water. Warm over low heat for 2–3 minutes, stirring gently until heated through. Sprinkle with 1/4 tsp salt and 1/8 tsp black pepper while warming. If protein is cold shredded meat, gently break apart with a fork while heating.

  2. 2

    Toss with BBQ sauce

Remove from heat and toss the warmed protein with 2 tablespoons mild BBQ sauce so pieces are evenly coated. Keep warm covered while preparing buns and cheese.

Assemble sliders

  1. 3

Preheat a small nonstick skillet or griddle over medium-low heat. Split the 2 brioche slider buns and spread about 1/2 tsp softened butter on the cut face of each top bun.

  2. 4

Place the bottom halves of the buns, cut side up, in the skillet. Divide the sauced protein evenly between the two buns (about 2 oz per slider) and mound gently on each bottom bun.

  3. 5

Top each mound of protein with one cheddar slice, folding if necessary to cover. Place the top buttered bun halves, butter side up, on top.

  4. 6

Cover the skillet with a lid or a piece of foil and warm for 1–2 minutes until cheese melts and buns are slightly toasted. Check occasionally to avoid burning.

  5. 7

Remove sliders from skillet. Add 1 leaf of lettuce and 2 pickle slices on top of the protein before replacing the bun top if using. Press gently to secure.

Plating and optional side

  1. 8

Place the 2 sliders on a small plate. Add 1/2 cup baby carrots or apple slices to the side if desired. Serve warm.

  2. 9

Provide extra BBQ sauce on the side for dipping, about 1–2 tablespoons if desired.
