Toast the Muffins
Split the English muffins in half and toast them until golden brown.

In a large pot, bring water to a gentle simmer. Add white vinegar and a pinch of salt. Crack each egg into a small bowl, then gently slide into the water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and set on a paper towel.
Preparing Hollandaise Sauce
Make Hollandaise Sauce
In a bowl, whisk together the egg yolks, lemon juice, and a splash of water. Place over a double boiler and whisk continuously. Gradually add melted butter until the sauce thickens. Season with cayenne pepper, salt, and pepper.

Layer the Ingredients
On each toasted muffin half, place a slice of Canadian bacon (for traditional), smoked pulled pork (for Deep South), crab cake (for Crabby), or grouper (for Florida Native). Top each with a poached egg and drizzle with hollandaise sauce. Garnish with additional seasoning as desired.
