    Make dough

    Whisk together the flour, cocoa powder and fine sea salt in a bowl until homogenous. In a food processor or with a pastry cutter, pulse the cold cubed butter with the granulated and brown sugars until the mixture resembles coarse crumbs with pea-sized butter pieces. Add the egg yolk and vanilla extract and pulse/mix just until the dough begins to come together. If the dough seems dry, add 1 teaspoon cold water at a time until it holds.

    Chill and shape

    Turn the dough onto a lightly floured surface, press into a 1-inch thick disc, wrap tightly in plastic and refrigerate for at least 1 hour (or up to 2 days).

    Bake

    Preheat oven to 350°F (175°C). Roll chilled dough to about 1/4-inch thickness. Cut into rounds or shapes as desired and place on a parchment-lined baking sheet about 1 inch apart. Bake 10–12 minutes until edges are set but centers remain slightly soft. Cool on the sheet 5 minutes, then transfer to a rack to cool completely.

    Optional finish

    Once cool, sprinkle baked cookies lightly with powdered sugar or a tiny pinch of flaky salt to contrast chocolate.

Milk Chocolate Mousse

    Prepare chocolate

    Chop milk chocolate finely and place it in a heatproof bowl.

    Bloom gelatin (optional)

    If using gelatin for stability, sprinkle gelatin over 2 tablespoons cold water and let sit 5 minutes to bloom.

    Warm milk and infuse

    In a small saucepan, heat 1/2 cup whole milk with 2 tablespoons sugar and the fine sea salt over medium until just simmering. Remove from heat and pour over the chopped milk chocolate. Let sit 1–2 minutes to melt.

    Emulsify

    Whisk melted chocolate and milk gently until smooth and glossy. If gelatin was bloomed, heat it briefly until liquid (10–15 seconds in the microwave) and whisk into the warm chocolate mixture. Let cool to lukewarm.

    Whisk yolks

    Whisk the 3 egg yolks with the remaining sugar until slightly thickened and pale. Temper the yolks by whisking a few tablespoons of the warm chocolate into the yolks, then whisking the yolk mixture back into the chocolate bowl until fully combined and smooth.

    Whip cream and fold

    Whip 1 1/2 cups heavy cream to soft peaks. Fold one-third of the whipped cream into the chocolate to loosen, then gently fold in the remaining cream until uniform and airy. Taste and adjust salt if needed. Chill at least 1 hour to set slightly before plating.

Salted Mint Milk Ice

    Infuse milk with mint

    In a saucepan, combine 2 cups whole milk, 1/4 cup sugar, mint leaves, vanilla extract and the fine sea salt. Warm over low heat until just below simmer (do not boil). Remove from heat, cover, and steep for 30 minutes to extract mint flavor.

    Strain and finish

    Strain the infused milk through a fine-mesh sieve, pressing on the mint to extract liquid. Add lemon juice (if using) and stir to combine. Taste and adjust salt or sugar.

    Freeze as milk ice (granita-style)

    Pour the cooled mint milk into a shallow metal or glass pan and place in the freezer. After 30–45 minutes, use a fork to scrape formed ice crystals; return to freezer and repeat scraping every 30 minutes until you have fine, flaky milk ice (about 2–3 hours total). For a smoother milk 'ice cream' texture, churn in an ice cream maker according to manufacturer instructions and freeze until scoopable.

Assembly & Garnish

    Scoop or pipe a generous dollop of chilled milk chocolate mousse into serving glasses or onto plates. Crumble or place one or two sable cookies alongside or beneath the mousse to provide structure and crunch.

    Spoon a small mound (about 2–3 tablespoons) of the salted mint milk ice next to the mousse so temperature and texture contrast.

    Sprinkle a light pinch of coarse/flaky sea salt over the mousse and milk ice to amplify flavors. Scatter cocoa nibs or shaved chocolate and add a fresh mint sprig for aroma and presentation.

    Serve immediately so the milk ice retains its texture and the sable remains crisp. Leftovers: store mousse covered in the refrigerator up to 2 days; keep milk ice frozen and cookies in an airtight container at room temperature.
