Fruit Syrups

Prepare Passion Fruit Syrup
Combine the passion fruit pulp and 1 tablespoon of granulated sugar in a small saucepan. Heat gently over medium-low heat until slightly thickened, about 3β4 minutes, stirring occasionally. If the pulp is very thick, add 1 tablespoon water to loosen. Remove from heat and let cool. Strain through a fine mesh sieve if you prefer a seed-free syrup, pressing to extract liquid. Chill in the refrigerator until ready to use.

Prepare Orange Syrup
In a separate small saucepan, combine the freshly squeezed orange juice and 1 tablespoon granulated sugar. Warm over medium-low heat for 2β3 minutes, stirring until sugar dissolves and the mixture just comes to a simmer. Remove from heat and cool. This retains bright orange flavor without cooking it down into marmalade.

Prepare Guava Syrup
Place guava puree and 1 tablespoon granulated sugar in a small saucepan. Warm gently for 2β3 minutes until sugar dissolves and mixture is glossy. If the puree is very thick, add up to 1 tablespoon water to reach a pourable consistency. Cool to room temperature and refrigerate until cold.
Shave Ice & Assembly

Prepare ice for shaving. Using a shave-ice machine, ice shaver, or a high-quality food processor/blender (pulse with caution), shave or finely crush the ice blocks into light, fluffy snow. Fill four serving bowls or cups, packing loosely to create a tall mound (about 2 cups shaved ice per serving).

Layer Syrups
To build classic POG (passion-orange-guava) flavor, spoon 1 tablespoon passion fruit syrup, 1 tablespoon orange syrup, and 1 tablespoon guava syrup over each mound of shaved ice, drizzling in that order so the flavors layer. For a more colorful look, drizzle each syrup in separate bands across the ice. If you prefer stronger flavor, add another 1/2 tablespoon of each syrup per serving.

Finish with Condensed Milk and Optional Float
Drizzle 1 tablespoon sweetened condensed milk over each assembled shave ice. If using, tuck a scoop of vanilla ice cream into the center or on top of each serving to make a creamy float. Garnish with a teaspoon of passion fruit seeds over each for texture and a squeeze of lime if desired.

Serve immediately. Provide small spoons and straws; guests can mix syrups into the ice as they eat. Store any leftover syrups refrigerated for up to 5 days.
