Prepare Oysters

Chill bed

Pack a shallow serving platter or bowl with crushed ice to create a stable, chilled bed for the oysters. Leave a slight recess so oysters sit level.

Shuck the oysters: hold each oyster flat side up with a towel or glove. Insert an oyster knife at the hinge, twist gently to pop, run the knife along the top shell to sever the muscle, lift off top shell, and slide the knife under the oyster to free it from the bottom shell while preserving its liquor. Transfer each oyster to the ice bed, keeping them level so they retain their liquor.

If using pre-shucked oysters, place them on the ice immediately and keep refrigerated until serving.

Make Fennel-Pernod Mignonette

Finely mince the shallot and the fennel bulb (white part) so pieces are very small — this lets flavor distribute evenly on the oysters.

In a small bowl combine the minced shallot and minced fennel with the red wine vinegar and champagne vinegar. Stir to dissolve and macerate for 2–3 minutes; this softens the shallot and mellows its bite.

Add the Pernod to the vinegar mixture and stir. The Pernod will add anise/fennel notes that complement the fresh fennel; the alcohol aroma will mellow after a minute.

Whisk in the extra-virgin olive oil to slightly round the acid, then season with sea salt and freshly ground black pepper. Taste and adjust: add a little more vinegar if you want brighter acidity or up to 1/2 tsp more Pernod for stronger anise character.

Let the mignonette rest at room temperature for 5–10 minutes so flavors marry. Chop fennel fronds and microgreens, if using, and stir gently into the mignonette or reserve for garnish.

Assemble and Serve

Spoon about 1/2 to 1 teaspoon of the fennel-Pernod mignonette onto each oyster (amount can be adjusted to taste). The goal is to enhance the oyster without overwhelming the briny liquor.

Garnish each oyster with a tiny pinch of reserved chopped fennel fronds or a few microgreens if desired.

Arrange lemon wedges on the side. Serve immediately while oysters are cold, with small forks and napkins.

Discard any oysters that do not taste fresh or that have an off smell. Consume remaining mignonette within 24 hours refrigerated.
