    Prepare glassware

    Chill two coupe or rocks glasses by filling them with ice water. Let sit while you mix the cocktail, then discard the ice water just before serving.

    Dry shake (if using egg white)

    In a cocktail shaker, combine the gin, fresh lemon juice, simple syrup, orange liqueur, and egg white (if using). Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify and build foam.

    Wet shake

    Open the shaker and add the cup of ice. Seal and shake vigorously for 12–18 seconds until the shaker is cold to the touch and the mixture is well chilled and slightly diluted.

    Double strain and garnish

    Double-strain the cocktail into the chilled glasses (use a Hawthorne strainer and a fine mesh strainer) to remove ice shards and any coagulated egg bits. Add 1/4 cup of fresh ice to each glass if serving over ice (optional). Add one dash of Angostura bitters over the foam of each drink; use a toothpick to make a simple pattern if desired. Garnish each cocktail with a lemon twist or thin lemon wheel.
