Sparkling Aperitif

Light White Wine Option (for delicate seafood or salads)

Refreshing Non-Alcoholic Pairing

Method

Sparkling Aperitif

  1. 1

    Prepare glasses

Chill 4 stemmed glasses in the refrigerator for 10–15 minutes or fill with ice water while you prepare other components.

  2. 2

Place 2 ice cubes in each chilled glass (if you prefer your sparkling extra cold).

  3. 3

Pour 1/2 cup (4 fl oz) dry sparkling wine into each glass, filling approximately two-thirds of the glass to preserve bubbles.

  4. 4

If using orange liqueur, add 1/2 teaspoon to each glass and gently stir once with a bar spoon to combine without flattening the bubbles.

  5. 5

Twist a fresh orange peel over each glass to express the oils, then drop the twist into the glass as a garnish. Serve immediately.

Light White Wine Option (for delicate seafood or salads)

  1. 6

Chill the bottle of Sauvignon Blanc or unoaked Chardonnay to 45–50°F (7–10°C) for at least 30 minutes before serving.

  2. 7

Pour about 3/4 cup (6 fl oz) per serving into white wine glasses, filling them to the widest part to allow aromatics to develop.

  3. 8

Optional: float a thin lemon slice in each glass or wipe the rim gently with the lemon to enhance citrus notes.

  4. 9

Serve alongside light seafood, green salads, or vegetable-forward starters.

Full-Bodied Red Option (for red-meat dishes)

  1. 10

If the red wine has pronounced tannins or sediment, decant it for about 30 minutes to an hour (see decanting time ingredient) to soften tannins and open aromatics.

  2. 11

Bring the bottle to cellar temperature (60–65°F / 15–18°C) if stored too cold; do not over-warm.

  3. 12

Pour into large-bowled red wine glasses about 3/4 cup (6 fl oz) per serving to allow room for swirling and smelling.

  4. 13

Serve with red meats, rich stews, or aged cheeses to complement the fuller body.

Refreshing Non-Alcoholic Pairing

  1. 14

Fill two highball glasses with 4 ice cubes each.

  2. 15

Divide the cucumber slices between the glasses and lightly bruise a slice against the glass rim to release aroma.

  3. 16

Add 1 tsp fresh lime juice and 1/2 tsp simple syrup to each glass (omit syrup if you prefer unsweetened).

  4. 17

Top each glass with 1 cup (8 fl oz) sparkling water and stir gently once with a bar spoon to combine.

  5. 18

Garnish with an extra cucumber slice on the rim and serve cold.

Cheese & Snack Pairing (to accompany beverages)

  1. 19

Bring cheeses to room temperature 20–30 minutes before serving so flavors and textures are at their best.

  2. 20

Arrange mild soft cheese and aged hard cheese on a board, leaving space between them. Place crackers or sliced baguette nearby.

  3. 21

Spoon mixed olives into a small bowl and place on the board along with the almonds.

  4. 22

Drizzle 2 teaspoons of honey over the mild soft cheese or serve the honey in a small dish for dipping; the sweet contrast pairs well with both sparkling and full-bodied wines.

  5. 23

Recommend pairings on the board: sparkling aperitif or Sauvignon Blanc with the soft cheese and olives; full-bodied red with aged hard cheese and almonds.
