Method

Making the Almond Cake

1

Prepare the Batter

Preheat the oven to 350°F (175°C). In a mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

2

Combine Dry Ingredients

In another bowl, combine almond flour, all-purpose flour, and baking powder. Gradually add to the wet mixture, mixing until just combined.

3

Bake the Cake

Pour the batter into a greased and lined baking pan. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.

Preparing the Chocolate Ganache

4

Melt the Chocolate

In a saucepan, heat the heavy cream until just simmering. Remove from heat and add the chopped dark chocolate. Stir until smooth and glossy. Allow to cool slightly.

Making the Fruit Glaze

5

Prepare the Glaze

In a small saucepan, heat the fruit puree and sugar until dissolved. Sprinkle gelatin over the mixture, stirring until completely dissolved. Allow to cool.

Assembling the Petit Fours

6

Cut and Assemble

Once the almond cake is cooled, cut it into small squares or shapes. Dip each piece in chocolate ganache and allow to set. Drizzle with fruit glaze and top with edible gold leaf and fresh berries.
