Prepare the Tofu

Carefully drain the silken tofu and cut it into 1-inch cubes. Set aside.

Chop Aromatics

Mince the garlic, and ginger, and chop the green onions, keeping the whites and greens separate.

Cooking

Cook the Pork

In a large pan or wok, heat the sesame oil over medium heat. Add the ground pork and cook until browned and cooked through, about 5-7 minutes.

Add Aromatics

Add the minced garlic, ginger, and the white parts of the green onions to the pan. Stir-fry for an additional 1-2 minutes until fragrant.

Incorporate Sauces

Stir in the douchi, doubanjiang, soy sauce, and sugar. Cook for another 2-3 minutes to allow the flavors to meld.

Add Broth

Pour in the chicken broth and bring to a simmer. Gently add the tofu cubes to the pan, being careful not to break them. Simmer for 5 minutes.

Thicken the Sauce

In a small bowl, mix the cornstarch with a bit of water to create a slurry. Stir it into the pan to thicken the sauce, cooking for an additional 1-2 minutes.
