Crack and mix
Crack the 2 large eggs into a small bowl. Add 2 tablespoons of whole milk and 1 teaspoon of salt. Hold a fork or small whisk and beat vigorously until the yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds). Season with a small grind of black pepper; adjust later to taste.
Strain (optional)
If you prefer extra-silky eggs, pour the beaten eggs through a fine-mesh sieve into another bowl to remove chalazae and any thick bits.
Cooking
Preheat pan
Place a nonstick skillet (8–10 inch) over low to medium-low heat. Add 1 tablespoon unsalted butter and let it melt slowly so it just coats the pan and begins to foam but not brown (about 1 minute). The pan should be warm, not hot — a moderate low temperature keeps eggs tender.
Cook eggs slowly
Pour the beaten eggs into the center of the pan. Let them sit undisturbed for about 10–15 seconds so curds begin to form at the edges. With a silicone spatula, gently push the set edges toward the center, tilting the pan as needed to let uncooked egg flow to the perimeter. Continue this gentle folding and occasional pausing until the eggs are mostly set but still slightly glossy and moist — about 1.5 to 2 minutes total. Avoid high heat and constant aggressive stirring to prevent dryness.
Finishing (optional)
Immediately transfer the scrambled eggs to a plate to stop cooking. Taste and adjust salt and pepper. Sprinkle with 1 tablespoon chopped fresh chives and/or 1 tablespoon grated cheese if desired. Serve hot.
