General Prep

Bring ingredients together. Use very fresh eggs for best poaching results. For fried eggs, have butter or oil measured and a nonstick or well-seasoned skillet ready.

Crack each egg into a small ramekin or bowl (one per egg). This makes transferring eggs easier and prevents shell fragments.

Poached Eggs

Heat water and add vinegar

Pour 4 cups water into a wide shallow saucepan and bring to a gentle simmer over medium heat (small bubbles, not a rolling boil). Stir in 1 tablespoon white vinegar. The vinegar helps the whites coagulate; the flavor is mild and mostly disappears.

Create whirlpool (optional)

Using a spoon, stir the water in one direction to create a gentle whirlpool. This helps eggs hold their shape when you have only one egg at a time; with two eggs you can poach sequentially or use two small swirls spaced apart.

Slide eggs into water

Hold a ramekin close to the water surface and gently slide one egg into the simmering water. Repeat with the second egg, placing it a few inches away. Avoid dropping eggs from height to keep whites intact.

Cook to doneness

Let eggs cook undisturbed until whites are set and yolks reach desired firmness: about 3 minutes for runny yolks, 4 minutes for medium, 5 minutes for mostly firm. Maintain a gentle simmer; vigorous boiling will break the eggs apart.

Remove and season

Use a slotted spoon to lift each poached egg, letting excess water drain. Optionally blot on a paper towel to remove extra water. Season with a pinch of salt (use part of the 1 tsp) and a grind of black pepper.

Fried Eggs

Heat pan and fat

Place a nonstick or well-seasoned skillet over medium-low to medium heat. Add 2 tablespoons butter or oil and warm until butter is foaming but not browning, or oil is shimmering.

Add eggs to pan

Gently slide each egg from its ramekin into the pan, spacing them so they don't touch. Reduce heat slightly if edges start to brown too quickly.

Cook to preferred style

For sunny-side up: cook undisturbed about 2–3 minutes until whites are set but yolks remain runny. For over-easy: once whites set, carefully flip with a spatula and cook 15–30 seconds more. For over-medium: flip and cook 30–60 seconds. For over-hard: flip and cook 1–2 minutes until yolks are firm.

Season and rest

Remove eggs to a plate and season with remaining salt and black pepper to taste.

To Serve

Place eggs on toasted bread or on a plate. Sprinkle with chopped chives or parsley and add hot sauce or a lemon wedge if desired. Serve immediately while warm.
