Bring ingredients to room temperature
If butter is refrigerated, let it sit at room temperature for 10–15 minutes so it’s soft enough to spread easily.
Toast bread
Spread 1 tablespoon of softened butter evenly on one side of each sourdough slice. Place the bread butter-side-down in the hot skillet (or in the toaster). Toast until deeply golden and crisp, about 2–3 minutes per side in a skillet (1–2 minutes per side in a high-powered toaster). While the second side toasts, lightly butter the top side with the remaining butter.
Season
Once both sides are toasted and crisp, remove from heat. Immediately sprinkle each slice with a light pinch of sea salt (split the 1 tsp between the two slices) to boost flavor.
Toppings (Simple — choose or combine)
Tomato & cheese
If using goat or cream cheese, spread 1 tablespoon on a slice of toast. Top with halved cherry tomatoes (about 6 total split between slices). Drizzle tomatoes with a tiny pinch of olive oil (reserve from the base if needed), sprinkle 1/4 tsp sea salt and 1/8 tsp black pepper, then scatter microgreens or arugula over the top.
Everything-style
For a quick flavor boost, spread 1 tablespoon of softened butter or 1 tablespoon of goat cheese on a slice and sprinkle about 1/2 tsp everything bagel seasoning and 1/4 tsp red pepper flakes (use less if sensitive to heat).
Add egg (optional)
If adding an egg, cook to preference: fry in a nonstick skillet with 1 tsp olive oil over medium for a sunny-side-up (about 3–4 minutes) or poach in simmering water with a dash of vinegar for 3 minutes for a runny yolk. Season egg with a pinch of salt and pepper, then place on top of the assembled toast.
Final finish
Finish assembled toasts with a small sprinkle of black pepper (split the remaining 1/8–1/4 tsp between slices) and a light scattering of microgreens or an extra pinch of everything seasoning if desired. Serve immediately while warm and crisp.
