Ingredients: 1 liters dry Spanish-style hard apple cider (preferably from Galician or northwest Spanish apples); 200 ml chilled sparkling water; 2 tbs elderflower cordial (or light elderflower syrup); 15 ml fresh lemon juice; 10 ml honey syrup (1:1 honey:water) or light agave; 1 each thin lemon wheel or peel; 1 each small sprig of fresh mint; 1 each edible flower (optional; e.g., elderflower blossom or viola)

Chill a large wine glass or tall stemmed glass in the freezer for 10–15 minutes so the final drink feels crisp and mineral on the palate.

Remove the chilled glass. Add the elderflower cordial (2 tbs), fresh lemon juice (15 ml) and honey syrup (10 ml) to the bottom of the glass and stir gently to combine. These components add a delicate floral lift and just enough sweetness to enhance the cider's fruit and minerality.

Pour 250 ml of the chilled cider into the glass first, over the cordial mixture, then add 50 ml of chilled sparkling water to introduce a light, gentle fizz and lift the aromatics. Stir once very gently with a bar spoon to integrate — do not over-stir to preserve carbonation.

Taste and adjust: if you prefer a drier, more mineral profile, add another 25–50 ml cider and omit additional sugar. If you prefer a more floral, slightly sweeter profile, add up to 1 tsp (5 ml) more elderflower cordial or 5–10 ml more honey syrup, then gently stir.

Express the lemon peel over the glass by pinching it skin-side down to release the oils, then drop the peel or float a thin lemon wheel on top. Tuck the small mint sprig gently into the drink for a fresh green aroma—don't muddle it, just rest it.

If using, float an edible flower on the surface for an elegant, floral visual and subtle aroma.

Serve immediately while very cold and effervescent. Recommend serving alongside light seafood or tapas to complement the Galician inspiration.
