Prep the chicken
If chicken breasts are thick, butterfly each breast or pound to an even thickness about 1/2 inch using a meat mallet or rolling pin between two pieces of plastic wrap. Pat dry with paper towels and season both sides lightly with 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper.
Set up dredging station
Place the flour in a shallow dish. In a second shallow dish, beat the eggs until smooth. In a third shallow bowl, combine panko breadcrumbs, grated Parmesan, dried Italian seasoning, garlic powder, remaining 1/2 teaspoon salt and remaining 1/4 teaspoon black pepper; mix thoroughly to distribute the seasonings.
Dredge the chicken
Working one piece at a time, lightly coat a chicken breast in flour, shaking off excess. Dip into the beaten eggs, letting excess drip off, then press firmly into the breadcrumb mixture so the crumbs adhere evenly and form a compact coating. Place coated breasts on a baking sheet or plate and repeat with remaining pieces.

Pan-fry to golden
Heat a large skillet over medium heat. Add the olive oil and swirl to coat. When oil is hot (shimmering but not smoking), add the butter. Once butter melts and begins to foam, add the crumb-coated chicken breasts, presentation side down first if desired. Cook without moving for 4 to 5 minutes until the crust is deep golden brown. Flip and cook the second side 3 to 5 minutes more until golden and an instant-read thermometer inserted into the thickest part reads 160°F (71°C). If crust browns too quickly before the center is cooked, lower heat slightly and cover the pan for 1–2 minutes.
Rest and finish
Transfer the chicken to a cutting board and let rest 5 minutes (carryover will bring temperature to ~165°F/74°C). While resting, squeeze the lemon over the pan to deglaze briefly, swirling to combine with remaining butter and browned bits, then pour the pan juices over the chicken.
Serve
Slice chicken if desired, sprinkle with chopped fresh parsley and an extra pinch of salt or lemon if needed. Serve immediately alongside desired sides (salad, roasted vegetables, or pasta).
