Ingredients: 1 bottle Gavi (Cortese) white wine, chilled; 12 pieces raw large gulf shrimp (peeled, deveined, tails on); 2 tbsp extra-virgin olive oil; 2 tbsp fresh lemon juice; 1 tsp lemon zest; 2 tbsp fresh flat-leaf parsley, finely chopped; 1 tbsp fresh chives, thinly sliced; 1 clove garlic, grated; 1 tsp sea salt; 0.5 tsp freshly ground black pepper; 1 cup microgreens or baby arugula (for serving); 12 slices baguette, sliced on the diagonal; 1 tbsp extra-virgin olive oil; 0.25 tsp sea salt (for brushing)

SPANISH OIL DIP

Chill the Gavi bottle to 8–10°C (46–50°F) for at least 1 hour before serving. Keep it in an ice bucket partly filled with water and ice if serving outdoors.

If shrimp are frozen, thaw completely under cold running water and pat dry with paper towels. Leave tails on for presentation if desired.

Prepare shrimp

In a medium bowl, whisk together 2 tbsp extra-virgin olive oil, 2 tbsp fresh lemon juice, 1 tsp lemon zest, grated garlic, chopped parsley, sliced chives, 1 tsp sea salt and 1/2 tsp freshly ground black pepper until emulsified.

Make marinade

Add the shrimp to the bowl and toss thoroughly to coat. Cover and refrigerate for 15–20 minutes (no longer than 30 minutes) so the acid slightly firms the shrimp without cooking them.

Marinate shrimp

Remove shrimp from the marinade and arrange over a bed of microgreens or baby arugula. Spoon a little of the reserved marinade over the shrimp for shine. Serve immediately with chilled Gavi. The bright citrus and herb notes in the shrimp accentuate the wine's green fruit and mineral character.

Finish and serve

Preheat oven to 200°C (400°F). Arrange baguette slices on a baking sheet, brush lightly with 1 tbsp olive oil and sprinkle with 1/4 tsp sea salt. Toast 6–8 minutes until golden and crisp. Let cool and serve alongside the shrimp for spreading or topping.
