In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda and fine salt until evenly combined.

In a medium bowl or large measuring cup, whisk the buttermilk, eggs, melted butter and vanilla extract until smooth and uniform in color.

Make a well in the center of the dry ingredients and pour the wet mixture into it.

Gently fold the wet and dry ingredients together with a spatula or wooden spoon until just combined. It’s okay to have a few small lumps — do not overmix (overmixing develops gluten and makes pancakes tough).

If the batter is very thick (dollop holds a high peak), loosen with 1–2 tablespoons of milk or water at a time until a thick pourable consistency is reached (batter should flow slowly off a spoon).

Cook Pancakes

Preheat

Preheat a nonstick skillet or griddle over medium heat until hot. If using an electric griddle, set to 375°F (190°C).

Brush or wipe the cooking surface with a little neutral oil or melted butter to coat lightly.

Using a 1/4-cup measure (or 3–4 tablespoons), pour batter onto the hot surface, spacing pancakes 1–2 inches apart. Do not press down on the batter.

Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. The underside should be golden-brown.

Flip carefully with a spatula and cook the second side until golden and cooked through, about 1–2 minutes more. Adjust heat as necessary—if pancakes are browning too quickly, lower the heat slightly.

Transfer finished pancakes to a plate and keep warm in a low oven (200°F / 95°C) while you cook the remaining batter. Re-grease the griddle as needed between batches.

Serve & Finish

Warm the Nutella gently before serving by placing the jar in a bowl of warm water for a few minutes and stirring, or microwave in a small bowl in 10–15 second intervals until spreadable.

Arrange pancakes on plates, top with fresh summer berries. Add a small pat of butter if desired.

Offer Nutella and pure maple syrup on the side or drizzle maple syrup over the pancakes. For a combination, spread a thin layer of Nutella on a pancake then top with berries and a light drizzle of maple syrup.

Serve immediately while warm.
