Method
Bagel & Base
Toast bagels
Split the sourdough bagels and toast cut sides until golden and slightly crisp (about 2–4 minutes depending on toaster). Keep warm.
Spread 2 tablespoons of cream cheese on each toasted bagel half while still warm so it softens slightly.
Avocado Mash
Stir in lemon juice, olive oil, kosher salt, black pepper, and chili flakes (if using). Taste and adjust seasoning; set aside.
Toppings & Greens
If using onions raw, soak the thinly sliced red onion in cold water for 5 minutes then drain to mellow the bite. Pat dry.
Portion smoked salmon into two equal piles (about 60 g each) or arrange vegan alternative as desired.
Eggs & Finish
Bring a medium saucepan of water (about 2–2.5 L) to a gentle simmer (small bubbles, not a rolling boil). Add the vinegar.
Use a slotted spoon to lift eggs from the water, briefly drain on kitchen paper, and season lightly with sea salt and freshly ground black pepper.
Serve immediately while eggs are warm. If making vegetarian (v*) or vegan (ve*), replace smoked salmon with plant-based smoked alternative and use vegan cream cheese; for vegan, substitute poached eggs with seasoned soft tofu slices or a chickpea flour 'omelette' wedge if desired.
