    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the tagliatelle pasta and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon

    In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet with a slotted spoon and set aside, leaving the bacon fat in the skillet.

    Sauté the Mushrooms

    In the same skillet with the bacon fat, add the sliced mushrooms. Sauté for about 5 minutes until they are golden and softened. Add the minced garlic and cook for an additional minute until fragrant.

    Prepare the Rose Sauce

    Stir in the tomato paste and cook for 2 minutes. Then add the heavy cream, salt, and black pepper. Mix well and let the sauce simmer for about 5 minutes, stirring occasionally.

    Combine Ingredients

    Add the cooked tagliatelle and crispy bacon to the skillet with the sauce. Toss everything together to coat the pasta evenly with the sauce. Cook for an additional 2-3 minutes.

    Serve

    Remove from heat, and serve the Tagliatelle Alla Gigi hot, garnished with grated Parmesan cheese and chopped parsley.
