Preparation of Lamb

Season the Lamb
Pat the rack of lamb dry with paper towels. Season generously with salt and black pepper on all sides.

Prepare the Crust
In a food processor, combine shelled pistachios, breadcrumbs, and chopped parsley. Pulse until the mixture is finely chopped.

Apply Mustard
Remove the lamb from the skillet and brush the Dijon mustard evenly over the meaty side of the rack.

Coat with Crust
Press the pistachio and breadcrumb mixture onto the mustard-coated side of the rack to form a crust.
Roasting the Lamb

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Lamb
Place the crusted rack of lamb on a baking sheet and roast in the preheated oven for 20-25 minutes for medium-rare, or until it reaches your desired doneness.

Remove the lamb from the oven and let it rest for 10 minutes before slicing.

Grill the Vegetables
Preheat a grill or grill pan over medium heat. Grill the vegetables for about 5-7 minutes, turning occasionally, until tender and slightly charred.

In a small saucepan, combine the chopped fresh herbs and lamb juices. Bring to a simmer over low heat, stirring occasionally.

Once the sauce is heated through, remove from heat and serve alongside the sliced lamb and grilled vegetables.
