Method
Preparation
- 1
Prepare the Fish
Rinse the fresh catch of the day under cold water and pat dry with paper towels. Place it on a cutting board.
- 2
Make the Marinade
In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until combined.
Cooking
- 3
Marinate the Fish
Pour the marinade over the fish, ensuring it's well coated. Let it marinate for at least 15 minutes at room temperature.
- 4
Cook the Fish
Preheat a grill or a non-stick skillet over medium-high heat. Place the marinated fish on the grill or skillet and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.
- 5
Prepare the Vegetables
While the fish is cooking, steam or sauté the asparagus and cherry tomatoes until tender, about 5-7 minutes.
Serving
- 6
Plate the Dish
Once the fish is cooked, carefully transfer it to a serving plate. Arrange the steamed asparagus and sautéed cherry tomatoes alongside the fish.
- 7
Garnish and Serve
Drizzle any remaining marinade over the fish and vegetables for added flavor. Garnish with additional chopped parsley if desired. Serve immediately.
