Make the Pie Crust
In a large bowl, combine all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Form the Dough
Gradually add water, mixing gently until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap and refrigerate for at least 1 hour.

Prepare the Filling
In a large bowl, toss the sliced apples with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and lemon juice. Let it sit for about 15 minutes to allow the flavors to meld.

Assemble the Pie
Preheat your oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit your pie dish. Place the rolled-out dough in the dish and fill with the apple mixture. Roll out the second disc and cover the pie, sealing the edges. Cut slits in the top crust to allow steam to escape.

Bake the Pie
Bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the apples are tender.

Let the pie cool for a few minutes. Serve warm with a scoop of vanilla ice cream on top.
