Hot Chocolate Base

Method

Hot Chocolate Base

1

Combine dry ingredients

In a small bowl, whisk together the cocoa powder, granulated sugar, and a pinch of salt to remove lumps and ensure even sweetness.

2

Heat milk

Pour 2 cups whole milk into a small saucepan and warm over medium heat until steam begins to rise and small bubbles form at the edges (do not boil), about 4–5 minutes.

3

Add cocoa and chocolate

Whisk the cocoa/sugar mixture into the warm milk until dissolved. Add the chopped chocolate or chocolate chips and continue stirring until fully melted and the mixture is smooth and slightly thickened, about 1–2 minutes.

4

Finish hot chocolate

Remove from heat and stir in 1 tsp vanilla extract. Taste and adjust sweetness with additional sugar or a splash of flavored syrup if desired. Keep warm while preparing espresso and foam.

Cappuccino Espresso & Milk Foam

5

Brew espresso

Brew two shots of espresso (about 2 oz total) using your espresso machine or strong stovetop espresso maker. Pour the shots into each serving cup if making two drinks, or into a single large cup if combining.

6

Steam or froth milk

Pour 6 oz whole milk into a steaming pitcher. If you have an espresso machine with a steam wand, steam the milk until it reaches 140–150°F (60–65°C) and you achieve velvety microfoam (about 20–30 seconds steaming). If you don't have a steam wand, heat milk in a small saucepan until steaming (do not boil) then froth vigorously with a handheld frother or whisk until foamy.

7

Combine milk and espresso

Pour or ladle the steamed milk over the brewed espresso, holding back the foam with a spoon. Spoon the foam on top to create the classic cappuccino ratio (roughly 1/3 espresso, 1/3 steamed milk, 1/3 foam).

8

Dust (optional)

Lightly dust the foam with ground cinnamon or cocoa powder if desired.

Assembling Hot Chocolate / Cappuccino (Hybrid Serving Options)

9

Option A — Classic Hot Chocolate

For a straight hot chocolate: pour the hot chocolate base into a cup and top with whipped cream and mini marshmallows. Dust with cocoa or cinnamon if desired. Serve immediately.

10

Option B — Hot Chocolate Cappuccino (Mocha‑style)

For a mocha/cappuccino hybrid: pour 2 shots of espresso into a cup, add 6–8 oz of the prepared hot chocolate base (adjust to taste), then top with steamed milk foam (use steamed milk from the cappuccino step) and a small dollop of whipped cream or marshmallows. Dust with cocoa or cinnamon. This yields a rich mocha with cappuccino texture.

11

Option C — Cappuccino with Chocolate Accent

For a cappuccino with a chocolate accent: prepare the espresso and steamed milk as in the cappuccino section. Pour a tablespoon or two of the hot chocolate base into the bottom of the cup before adding espresso and steamed milk for a subtle chocolate flavor without making a full mocha.
