Wash and prepare produce
Thoroughly wash all greens, herbs and fruits under cold running water. Remove tough kale stems and discard. Core the apple and pear and quarter them. Slice the cucumber and chop celery into pieces that fit your juicer or blender. Peel ginger and measure roughly 1/2 inch (adjust to taste).
If using a cold-press (masticating) juicer, feed ingredients through in this order: leafy greens first (to create a green paste), then herbs, then firmer items (cucumber, celery, apple, pear), and finish with lemon and ginger. If using a centrifugal juicer, add ingredients in small batches for even extraction. If using a blender, continue to the blending directions.
Juicing (Cold-Press or Centrifugal)
Cold-press or centrifugal juicer method
Set up your juicer and place a container to collect juice. Feed kale and spinach leaves first, alternating with small amounts of cucumber or celery to help push the greens through. Add romaine and mint leaves. Add apple and pear pieces, then ginger. Squeeze the lemon (and lime if using) directly into the collecting container or feed through the juicer. Stir the collected juice gently to combine. Taste and add a touch of water if too concentrated.
If you want the juice chilled, pour over ice cubes and stir briefly. Serve immediately for best nutrient retention and flavor.
Blender (If no juicer)
High-speed blender method
Place all greens, cucumber, celery, apple, pear, ginger, mint, and lemon juice into the blender. Add 1/2 cup cold filtered water to help the blades. Blend on high until completely smooth (30–60 seconds).
Strain the blended mixture through a fine-mesh sieve, nut milk bag, or cheesecloth into a bowl, pressing or squeezing to extract as much liquid as possible. Discard the pulp or reserve for use in soups or baking. Chill or serve over ice.
Finish & Serve
Taste and adjust: if the juice is too bitter or green-tasting, add a few more apple pieces or a small pinch of salt to round flavor. If too tart, add a little water. Serve immediately in a chilled glass. Consume within 24–48 hours if refrigerated in an airtight container; shake or stir before serving.
