Prepare and char the baguette

Preheat a heavy skillet or grill pan over medium-high heat. Slice the baguette lengthwise to create two sandwich halves. Spread 1 tablespoon softened butter evenly on each cut side (total 2 tbs). Place the cut sides down on the hot pan and cook 1–2 minutes, pressing gently, until golden brown and lightly charred. Remove and set aside.

Apply aioli

While warm, spread garlic aioli evenly over the toasted cut side of both halves (about 1.5 tbs per half). Reserve a small spoonful of aioli if you want to drizzle on top of the chicken.

Prepare rotisserie chicken

Remove skin from the rotisserie chicken and shred the meat into bite-sized pieces until you have roughly 2 cups. Discard bones or reserve for another use.

Season the chicken

Place shredded chicken in a bowl. Add 1 tsp olive oil, 1 tsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Toss gently to combine and taste; adjust seasoning as desired. If using reserved aioli, fold 1 tbs into the chicken for extra creaminess.

Dress arugula

In a small bowl, toss the arugula with the remaining 1/2 tsp lemon juice (if any left), a light drizzle of olive oil (about 1/2 tsp), and a pinch of salt and pepper to lightly dress the greens so they don't wilt the bread.

Assemble sandwich

On the bottom half of the charred baguette, layer half of the dressed arugula, then add the seasoned shredded rotisserie chicken evenly across. Top the chicken with sliced tomato and thin red onion if using. Sprinkle parmesan shavings and a pinch of chili flakes if desired. Finish with remaining arugula and place the aioli-spread top half of the baguette over the sandwich. Press lightly to compact.

Finish and serve

Cut sandwich into 2 equal portions. Serve immediately while the baguette is still warm so butter and aioli meld with the chicken. Provide extra aioli or lemon wedges on the side if desired.

If serving with parmesan and chili flakes, sprinkle them over the chicken layer before adding the top bread. These add a savory bite and gentle heat; adjust quantity to taste.
