Make the dijonnaise

In a small bowl, combine 0.25 cups mayonnaise, 1 tablespoon Dijon mustard, 0.5 teaspoon fresh lemon juice, 0.5 teaspoon honey, 0.25 teaspoon garlic powder, 0.125 teaspoon salt, and 0.125 teaspoon black pepper. Whisk until smooth. Taste and adjust seasoning. Refrigerate while you prepare the burger so flavors meld.

Form the patties

Divide 1 lb ground beef into two equal portions (about 8 ounces each). Gently form each portion into a loose patty about 3.5–4 inches in diameter and roughly 3/4 inch thick, handling the meat as little as possible to keep it tender. Make a shallow indentation in the center of each patty with your thumb to prevent bulging while cooking.

Season

Lightly brush or rub 1 teaspoon neutral oil on the outside of each patty to promote browning. Season both sides of each patty with 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper, dividing the seasoning evenly between the two patties.

Cook the patties

Heat a heavy skillet (cast iron preferred) or griddle over medium-high heat until very hot, about 3–4 minutes. Once hot, add the patties and cook undisturbed for 3 minutes to form a crust. Flip and cook for another 2 minutes for medium (adjust time by ±1 minute for desired doneness). During the final 30–45 seconds of cooking, place one slice of American cheese on each patty and cover the pan with a lid or foil to melt the cheese, about 30–45 seconds.

Prepare onions and toast buns

While the patties cook, thinly slice 0.5 yellow onion into rings or half-rings. Split 2 burger buns and spread about 0.5 tablespoon unsalted butter on each cut face. Toast the buttered buns, cut-side down, in a separate skillet over medium heat or on a griddle until golden brown, about 1–2 minutes.

Assemble the burger

Spread about 1 tablespoon of dijonnaise on the bottom half of each toasted bun. Place the cheeseburger patty on top of the sauced bottom bun. Top each patty with 4 dill pickle slices and arrange some sliced onions on top (adjust quantity to taste). Spread an additional 1 teaspoon dijonnaise on the top bun if desired, then close the burger. Serve immediately.
