Prepare produce

Wash all produce thoroughly. Peel beets and cut into chunks small enough for your juicer or blender. Core and quarter the apples (peel optional). Peel the lemon or cut into halves if your juicer can handle peel; remove visible seeds. Peel the ginger and cut into slices.

Cold-press or centrifugal juicer method

Feed the beets, apples, lemon, and ginger through a cold-press (masticating) juicer, alternating ingredients (apple, beet, ginger, lemon) to help extraction and prevent clogging. Collect the juice in a clean container. If the juice is very thick, stir in up to 1 cup (240 ml) cold water to reach the desired consistency. Chill before serving or pour over ice.

Blender + fine straining method (if no juicer)

Place beets, apples, lemon, and ginger into a high-speed blender with 1 cup (240 ml) cold water. Blend on high until fully liquefied (30–60 seconds). Pour the blended mixture through a fine-mesh strainer, nut milk bag, or cheesecloth into a bowl or pitcher, pressing or squeezing to extract as much liquid as possible. Discard the pulp or save for another use. Chill or serve over ice.

Adjust and serve

Taste the juice and, if desired, add more lemon for brightness or a small piece of ginger for extra spice. Stir well. Pour into glasses over ice if using. Consume fresh for best flavor and nutrient retention.
