Crispy Potatoes
prep potatoes
Peel (optional) and rinse the potatoes. Grate them using the large holes of a box grater or pulse into coarse shreds in a food processor. Transfer grated potatoes to a clean kitchen towel and squeeze out as much moisture as possible (about 1–2 minutes of wringing).

Heat 2 tablespoons vegetable oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering. Spread the potato mixture evenly into the skillet and press down with a spatula to form a compact layer. Cook undisturbed for 5–7 minutes until the underside is deeply golden and crisp. Flip in sections (or invert onto a plate and slide back into the pan) and cook another 4–6 minutes until both sides are crisp and potatoes are cooked through. If needed, reduce heat to medium to avoid burning while allowing center to finish. Transfer to a plate and keep warm. Stir in chopped parsley just before serving.

While potatoes cook, heat a separate large skillet over medium heat. For bacon: Add bacon strips in a single layer and cook 3–4 minutes per side until crisp and browned. Transfer to a paper towel–lined plate to drain. For pork sausages: add 1 teaspoon oil, cook sausages, turning frequently, about 8–10 minutes until browned and cooked through (internal temp 160°F/71°C). Keep warm.

Crack the farm eggs into the skillet. For sunny-side-up: cook gently until whites are set but yolks remain runny, about 3–4 minutes; cover the pan for 30–45 seconds if the whites need finishing. For over-easy: cook 2–3 minutes then carefully flip and cook 20–30 seconds more. Season eggs with a pinch of salt and pepper. Remove from heat and keep warm.

While proteins are finishing, heat a grill pan or heavy skillet over medium-high. Brush both sides of each ciabatta slice with olive oil and sprinkle lightly with sea salt. Place slices on the hot pan and char 1.5–2 minutes per side until golden with grill marks. Remove and spread softened butter on warm slices.
