Season the sushi-grade tuna with salt and pepper. Heat a non-stick skillet over high heat and sear the tuna for about 1-2 minutes on each side, until the outside is browned but the inside remains rare. Remove from heat and let it rest before slicing.

Make the Wasabi Dressing

In a small bowl, mix the wasabi with soy sauce to create a dressing. Adjust the amount of wasabi according to your spice preference.

Prepare the Vegetables

Dice the tomato, avocado, and cucumber. Thinly slice the red onion.

On a plate, lay down a bed of fresh spinach. Top with the cooked rice, followed by the sliced tuna. Arrange the diced tomato, avocado, cucumber, and red onion around the tuna. Drizzle the wasabi dressing over the top and sprinkle with toasted sesame seeds.
